Akshaya Patra in Assam first started operations in February 2010 through its kitchen at Guwahati. This centralised kitchen is ISO 22000:2005 certified, and utilises state-of-the-art machinery to ensure the best efficiency, quality and taste in the food at all times. The kitchen currently reaches out to over 53,649 children across nearly 592 schools every day.

Maintaining growth and exemplary standards of quality across this mammoth operation is crucial to Akshaya Patra. The Foundation achieves this through support received from the Government, corporate funds, philanthropic donors, volunteers and well-wishers. Akshaya Patra's mid-day meal programme is a huge operation running across different verticals like technological advancements, quality control, transportation for food delivery and communication with various stakeholders, and so on.

Akshaya Patra also understands the need to be highly transparent in its operations, and thereby allows its financial and intellectual property to be available to the public. The organisation believes that in order to fulfil its vision that "No child in India shall be deprived of education because of hunger" there is a critical need to expand the operation as far as possible. Keeping this in mind, Akshaya Patra's information is made easily available to all organisations, the Government and other enthusiasts, to encourage participation, and spread awareness on the Foundation's work.
